Preheat the oven to 200°C. Peel or thoroughly wash the potatoes and cut them into fries of no more than 1cm thickness. Transfer the fries to a bowl and drizzle with olive oil. Season the fries with salt and pepper, then toss well to coat. Transfer to a parchment-lined baking sheet and bake in the oven for 30 - 40 minutes or until golden-brown, tossing halfway.

Separate the bacon slices and transfer to another parchment-lined baking sheet. Bake in the oven for 5 - 8 minutes. In the last 3 minutes, add the bun to the oven.

Finely crumble the tortilla chips, leaving them in the provided bag (see Tip). Transfer them to a bowl. In another bowl, combine the water with the flour (see pantry for amounts). Coat the burger with the batter and then with the tortilla crumbs, ensuring it is evenly coated. In a frying pan, heat the sunflower oil and medium-high heat, then fry the burger for 5 minutes per side or until it is done.

Tip: You can also use a kitchen mixer if preferred.

Cut half of the tomato into slices and dice the rest. Chop the cucumber into crescents. Keep some leaves of the lettuce aside for garnish. Roughly chop the rest of the lettuce. Transfer the lettuce, diced tomato and cucumber to a salad bowl and toss everything together. In a small bowl, combine half of the mustard, honey, half of the mayonnaise, and white balsamic vinegar to make a dressing. Season to taste with salt and pepper.

Finely chop the onion. Mix the reserved mayonnaise with the smokey ketchup, onion, and the rest of the mustard in a small bowl.

Serve the fries on plates. Cut open the bun. Spread the bun with the sauce and top with the burger and the bacon, add the tomato and lettuce leaves, spread the sauce over the bun's top, and close the burger. Serve the salad on the side and drizzle the dressing on top.
