Cooking Steps

Make the wedges

  • Preheat the oven to 210°C.
  • Heat a light drizzle of sunflower oil in a frying pan over medium-high heat and fry the potato wedges for 15 minutes until golden-brown. Season to taste with salt and pepper.
  • Crush or mince the garlic.
  • Pat the Cypriot-style cheese dry with kitchen paper and cut into slabs of 0.5cm thickness.

Tip: this recipe is high in calories. Are you watching your calorie intake? Serve just half of the cheese. You can use the rest of it the next day in a lunchsalad.

Fry the vegetables

  • Heat a light drizzle of olive oil in a deep frying pan over medium-high heat.
  • Fry the onion and bell pepper for for 5 - 6 minutes.
  • Add half of the garlic and fry for 2 more minutes. Season with salt and pepper. 
  • Bake the bread roll in the oven for 6 - 8 minutes.

Make the garlic mayo

  • Cut the lime into wedges.
  • In a small bowl, combine the mayonnaise with the rest of the garlic, along with the juice of (per person) 1/2 lime wedge and 1/2 tsp of water.
  • Season to taste with salt and pepper.
Fry the cheese

  • Heat a clean non-stick frying pan over medium-high heat and fry the cheese for 2 - 3 minutes on each side until evenly golden-brown.
  • Reduce the heat, squeeze in 1 lime wedge per person and add the mango chutney. Ensure the cheese slices are entirely coated with the chutney and turn off the heat.
  • Cut open the bread roll and spread with the garlic mayo.
  • Fill with the Cypriot-style cheese and the vegetables, then serve alongside the potato wedges.
