Cooking Steps

  • Boil plenty of water in a pot or saucepan.
  • Thoroughly wash (or peel) the potatoes and then cut them into wedges.
  • Cook the potatoes for 8 - 10 minutes, covered. Reserve 40 ml of cooking water per person, then drain and add back to the pot.

  • Finely chop the onion and crush or mince the garlic.
  • Chop the bell pepper into strips and grate the Parmigiano Reggiano.
  • Chop the basil into ribbons.

  • Heat the olive oil in a skillet over medium-high heat and fry the burger for 5 - 7 minutes. Set the burger aside but keep the pan with cooking fat.
  • Add the garlic, onion, bell pepper, and fry for 1 - 2 minutes in the frying fat of the burger. 
  • Deglaze with a splash of balsamic vinegar and add the passata, half of the Sicilian herbs, and sugar, then cover with the lid and allow to cook for 2 - 4 minutes over medium-low heat. Season to taste with salt and pepper. 
  • Add the burger to the sauce sprinkle the burger with the grated cheese and cover the pan. Turn the heat low and let the cheese melt in 2 - 3 minutes.

  • Add a knob of butter with basil and remaining Sicilian herbs to the drained potatoes and fry for 1 - 2 minutes on medium-high heat. Season with salt and pepper.
  • Serve the potatoes on plates.
  • Place the burger with sauce alongside the potatoes.
