Cooking Steps

Bake the lava cakes

You can prepare some elements in advance. See the 'mise en place' information on the front of the recipe card.

  • Preheat the oven to 180°C.
  • Remove the lava cakes from the packaging and transfer to a parchment-lined baking sheet.
  • Bake in the oven for 10 minutes.
Make the sauce

  • In the meantime, zest and juice the lime into two small bowls.
  • Place a small saucepan over medium high heat. Add the strawberry jam, the lime juice and the water (see pantry for amount). Add (per person) 0.5 tsp lime zest and mix well to combine.
  • Heat the sauce for 1 - 2 minutes, taking care not to let it boil.
Toast the almonds

  • In a small bowl, combine the mascarpone with the sugar.
  • Taste and add some of the remaining lime zest as preferred.
  • Heat a clean frying pan over high heat and toast the almonds until golden-brown. Remove from the pan and set aside.
Serve

  • Carefully remove the lava cakes from the baking sheet, then serve on plates.
  • Top with the mascarpone.
  • Drizzle the strawberry sauce around the lava cake.
  • Garnish with the shaved almonds to finish.
