Preheat the oven to 200°. Press or mince the garlic.
Heat 1/2 tbsp olive oil per person in a deep frying pan over medium-high heat. Add the garlic and half of the oregano and fry for 1 minute, or until fragrant. Deglaze with the balsamic vinegar.
Add the passata and 1/2 tsp sugar per person and stir well to combine. Season with salt and pepper, then allow to simmer gently over low heat for 5 - 7 minutes.
Roll out the pizza dough on a baking sheet - the dough is already rolled in paper, so you don't need to use any extra baking paper. Spread the tomato sauce over the dough.
Scatter the grated goat's cheese over the pizza. Tear the mozzarella into pieces put them on the pizza. Cut the blue cheese cubes up slightly smaller then add these to the pizza. Sprinkle over the rest of the oregano and some pepper. Put the pizza in the oven to bake for 13 - 15 minutes, or until the cheese is golden brown and melted.
Take the pizza out of the oven, cut it into slices and serve.
