Cooking Steps

  • Chop the cucumber into small pieces.
  • Peel two bananas and chop them up.
  • Peel the mango and cut the flesh into small pieces (see Tip).

Tip: if the mango isn't ripe yet, put it in a paper bag, fold the bag shut and then leave it to ripen at room temperature for 1 day.

  • Squeeze half a lime into a blender or a jug/tall container (if you're using an immersion blender).
  • Add the mango, banana, spinach, cucumber and coconut milk.
  • Blend until you have a thick smoothie.

  • Add some honey to taste and blend the smoothie briefly one more time to mix it through.

  • Pour the smoothie into two glasses.
