Cooking Steps

Prepare

  • Crush or mince the garlic. Finely dice the carrot.
  • Chop the Romano pepper into strips.
  • Thoroughly wash the leek and chop into thin rings.
  • Finely chop three quarters of the ham and leave the rest whole. 
Frying

  • Heat a drizzle of sunflower oil in a wok or deep frying pan over medium-high heat.
  • Add the garlic and crumble in the stock cube (see pantry for amount).
  • Fry for 1 minute, then add the carrot, leek and Romano pepper and fry for 6 - 8 more minutes.
  • Stir the finely chopped ham into the vegetables.

  • Heat a drizzle of sunflower oil in a frying pan and fry the rest of the ham for 1 minute, then remove from the pan and set aside.
  • Fry the egg in the same pan.

Did you know... eggs are one of the few ingredients that are rich in vitamin D, which aids with calcium absorption. Many of however don't get enough vitamin D, particularly during the darker winter months. Fatty fish is another good source of vitamin D.

Serve

  • Add the noodles to the vegetables along with the fish sauce and stir-fry for 2 - 3 minutes over high heat (see Tip). 
  • Add the sesame oil and mix well to combine, seasoning to taste with salt and pepper.
  • Serve the noodles on plates and top with the fried egg and ham.

Tip: If you're watching your salt intake, just use half of the fish sauce. You can always add some more to taste after serving.
