What does farfalle mean?

Farfalle, an Italian pasta variety, is known for its butterfly-like shape. The term 'farfalle' is Italian for 'butterflies', it is the plural form of 'farfalla'. In Dutch they are also called 'bows' or 'butterflies'.

Why not rinse pasta with cold water?

Do not cook the pasta too long: al dente is perfect. The pasta will continue to cook a little after draining. Do not rinse the pasta with cold water after draining, as this will make the pasta cold and tough. After draining, mix the pasta with the sauce or a dash of the cooking liquid (always reserve some cooking liquid before draining the pasta).
