Cooking Steps

  • Boil per person: 90ml water with 1/8th stock cube in a saucepan. 
  • Cook the giant couscous for 12 - 14 minutes, covered, on low heat, then season to taste with salt and pepper.
  • Meanwhile, crush or mince the garlic and dice the onion.
  • Cut the courgette into quarters lengthways, then slice.

  • Heat a light drizzle of olive oil in a pot over medium-high heat and fry the garlic, onion, and courgette for 2 - 3 minutes. 
  • Meanwhile, finely chop the stems of the basil and dice the tomato.
  • Deglaze the pan with the courgette with white balsamic vinegar (see pantry items for quantity) and season with salt and pepper.
  • Add the tomato, the chopped basil stems, and per person: 150ml water and 1/4th stock cube to the pot, stir well, and let boil over medium heat for 5 - 6 minutes.

  • In a small frying pan, heat a light drizzle of olive oil over medium-high heat. Fry the chicken for 3 - 4 minutes.
  • In the meantime, chop the basil and grate the Parmigiano.
  • When the soup is done, turn off the heat and finish it by stirring in the cooking cream, the Sicilian herbs and the Italian herbs.
  • Season well with salt and pepper.

  • Serve the couscous in deep plates or bowls.
  • Pour the soup over the couscous and top with the fried chicken.
  • Garnish with the chopped basil and grated Parmigiano.
