Cooking Steps

  • Preheat the oven to 200°C. 
  • Halve the puff pastry lengthways. You will use one half in step 2 and one half in step 3.
  • Slice the ham lengthways into 1 cm slices.

  • Spread the honey-mustard dressing over one of the puff pastry halves, then sprinkle the grated mature cheese. 
  • Grate the Parmigiano Reggiano and sprinkle over as well. 
  • Roll up one edge of the pastry into the centre. Do the same with the opposite edge to meet in the middle. 
  • Cut the rolled-up pastry into thin slices.

  • Slice the other half of the puff pastry lengthways into 2 cm strips. 
  • Divide the ham over every other pastry strip. 
  • Twist two strips of puff pastry together, one with ham and one without. 
  • Repeat with all strips to form the twists.

  • Transfer the palmiers and twists to a parchment-lined baking sheet. 
  • Brush both with the milk. Sprinkle the Gouda cheese on the twists and sprinkle the sesame seeds on the palmiers. 
  • Bake in the oven for 20 - 25 minutes.
  • Serve while hot or let cool and serve at room temperature.
