Cooking Steps

  • Combine the dried cranberries, 2 tbsp sugar, 1 tsp cinnamon and 200 ml water in a saucepan over medium heat.
  • Stirr frequently and simmer gently for 10 - 15 minutes until the cranberries burst open. Allow to cool down until the compote thickens.
  • Soak the raisins in a small bowl with water.
  • Seperate the egg white from the yolk and keep both in seperate large bowls.

  • Beat the eggs and a pinch of salt with a mixer until stiff peaks form.
  • Mix the egg yolks with 20 g sugar 4 - 5 minutes until airy and creamy.
  • Add the milk and flour little by little and combine well.
  • Carefully fold in the stiff egg whites with a spatula until no big egg white lumps remain.

  • Melt 1/2 tbsp butter in a frying pan with a thick bottom and a lid over medium heat.
  • Pour the whole batter into the pan, add the lid and cook 3 - 5 minutes or until golden brown. Sprinkle the raisins on top after 3 minutes.
  • Once the underside is golden brown cut the kaiserschmarrn in quarters, flip and cook for another 3 minutes or until golden brown.
  • Tear the the kaiserschmarrn into bite-sized pieces.

  • Add 1 tbsp sugar and 1 tbsp butter to the frying pan.
  • Turn up the heat to medium-high and toss the pieces 3 - 4 minutes until the sugar has caramelized.
  • Devide the kaiserschmarrn over two deep plates.
  • Sprinkle the powdered sugar on top and serve with the cranberry compote.
