Cooking Steps

  • Boil plenty of water in a pot or saucepan for the noodles and cook the noodles for 4 - 5 minutes until al dente.
  • Reserve 25ml of the cooking liquid per person, then drain and set aside.

  • Meanwhile, heat a drizzle of sunflower oil in a wok or deep frying pan over medium-high heat and stir-fry the vegetable mix for 8 - 10 minutes. Season with salt and pepper.
  • Pat the shrimp dry with kitchen paper.
  • Heat a drizzle of sunflower oil in a frying pan over medium-high heat and fry the shrimp for 2 - 3 minutes. Season with salt and pepper.

  • Meanwhile, mix the tomato ketchup in a bowl with the teriyaki sauce and soy sauce.
  • Transfer the sauce, noodles and the cooking liquid to the pan with the vegetables and fry for another minute.
  • Chop the Thai basil.

  • Serve the noodles and vegetables on plates and top with the shrimp.
  • For the parents, garnish with the Thai basil and the peanuts.
