Cooking Steps

Boil the potatoes

  • Boil plenty of salted water in a lidded pot or saucepan.
  • Meanwhile, thoroughly wash the potatoes, then cut into small cubes.
  • Transfer the potatoes to the pot and boil them for 12 - 13 minutes, covered. Then drain and add back to the pot.
  • Stir in the pesto and season to taste with salt and pepper.
Chop the vegetables

  • Slice the onion into thin half rings.
  • Cut the courgette into crescents.
  • Chop the bell pepper into strips.

  • Melt a knob of butter in a frying pan over medium-high heat. When the pan is nice and hot, fry the steak for 1 - 3 minutes per side. Remove from the pan, season with pepper and allow to rest under aluminium foil.
  • Meanwhile, heat a drizzle of olive oil in a frying pan and fry the onion, bell pepper and courgette with the Sicilian herbs for 6 - 8 minutes. Season with salt and pepper.

  • Serve the potatoes with the steak and vegetables.
  • Serve with mayonnaise to taste.
