Cooking Steps

1

Take the steak out of the fridge and allow it to reach room temperature. Preheat the oven to 200°C. Transfer the fries to a parchment-lined baking sheet and bake in the oven for 20 - 25 minutes or until golden-brown, tossing halfway.

2

Cut the bell pepper into strips and the onion into thin half rings. Heat a drizzle of olive oil in a deep-frying pan over medium-high heat. Fry the bell pepper and half of the onion for 7 - 8 minutes. In a bowl, mix the red wine vinegar with the sugar. Add the rest of the onion and season with salt and pepper to taste. Mix everything together and set aside, stirring occasionally so the flavours can sink in.

Did you know.. as well as vitamin C, bell peppers are also high in vitamin E. This antioxidant is also found in sunflower oil, wholegrain products, nuts, seeds and green vegetables.

3

Prepare 100ml water per person. Heat a knob of butter in a small saucepan. Add the flour and toast until fragrant, then gradually whisk in the water until well incorporated. Stir in the cheese and allow to melt. Add the BBQ rub, mix well and turn off the heat. Season to taste with salt and pepper.

4

Melt a knob of butter in a frying pan over medium-high heat. When the butter is nice and hot, fry the steak for 1 - 3 minutes per side. Remove from the pan, season with pepper and allow to rest for at least 3 minutes under alimiunium foil.

5

When the fries are done, add the piri piri seasoning and toss everything together.

6

Slice the steak into strips. Serve the fries on plates with the fried vegetables on top. Drizzle the cheese sauce over the dish, add the steak on top and add the pickled onion.
