Cooking Steps

Prepare

  • Preheat the oven to 200°C. 
  • Transfer the puff pastry to a parchment-lined baking sheet. 
  • Peel and core the apples, then slice them and transfer to a large bowl. 
  • Juice half of the lemon. Add the lemon juice to the apple slices and toss well to combine.
Make the filling

  • In a bowl, combine 100g granulated sugar with the cinnamon, the flour, the raisins and the shaved almonds.
  • Transfer this mixture to the apple and toss well.
  • Spread the apple filling in a long strip over the centre of the pastry, leaving the edges free.
Bake the strudel

  • Fold the long sides of the pastry over the apple filling, making sure the pastry overlaps. Press together the open ends, so as to seal the pastry.
  • Turn the entire pastry over so that the seam is facing downwards.
  • Use a fork to pierce the surface of the pastry several times.
  • Bake the apfelstrudel in the oven for 30 - 35 minutes.
Serve

  • Meanwhile, transfer the cream and 1 tbsp granulated sugar to a clean mixing bowl.
  • Use a handheld mixer to whip the cream into stiff peaks (see Tip).
  • Scatter the powdered sugar over the apfelstrudel and serve with the whipped cream alongside.

Tip: taste and add more sugar as preferred.
