Cooking Steps

  • Preheat the oven to 180˚C. 
  • Peel, core and dice the apples into 2cm pieces. 
  • Grate the ginger. 
  • Add the apple and ginger to a mixing bowl and combine together with half of the cane sugar and 2 tbsp of flour.

  • Transfer the apple mixture to an oven dish. 
  • Add the rest of the flour, rest of the cane sugar, speculaas spices and a pinch of salt to the mixing bowl. 
  • Dice the butter and add to the bowl. 
  • Using your hands, fold the butter into the flour mixture until it reaches a sandy, crumbly texture and sticks together when squeezed.

  • Sprinkle the flour topping over the apple mixture. 
  • Bake in the oven until the topping is golden brown, for about 40 - 45 minutes.

  • Meanwhile, in a medium bowl, combine the crème fraîche with 1 tbsp of granulated sugar. 
  • Whisk together until thick, for 1 - 2 minutes. 
  • Serve the crumble in bowls with a dollop of the whipped crème fraîche.
