Cooking Steps

  • In a large bowl, use a whisk or handheld mixer to cream the butter and sugar.
  • Beat in the egg, then add the flour and the speculaas spices. 
  • Knead well to combine, then shape the dough into a ball.
  • Cover the bowl in plastic wrap, then chill the dough in the fridge for 30 minutes.

  • Preheat the oven to 180°C. Dust the countertop with flour and then roll out the dough to around 0.5cm thickness.
  • Cut out Christmas tree and candy cane-shaped cookies (see Tip).
  • Knead the dough back together, then roll it out again. Repeat until you've used all of the dough.

Tip: use cookie cutters if you have them.

  • Transfer the cookies to a parchment-lined baking sheet, making sure to leave enough space between them (see Tip). Bake in the oven for 10 - 12 minutes.
  • Allow to cool completely before you start decorating.
  • In the meantime, finely chop the pistachios and the cranberries.

Tip: if they don't all fit on one baking sheet, you can bake the cookies in multiple batches.

  • In a bowl, combine the powdered sugar with the water (see pantry for amount). Mix until smooth, then drizzle the icing over the cookies.
  • Use the pistachios to decorate the Christmas trees and the cranberries to decorate the candy canes.
