Cooking Steps

  • Add the heavy cream and powdered sugar to a mixing bowl. 
  • Mix with a handheld mixer until it forms stiff peaks. 
  • Transfer to the refrigerator and chill while preparing the pancakes.

  • Combine the eggs and buttermilk in a large mixing bowl.
  • Add the flour, baking powder and salt. 
  • Mix until just combined.

  • Melt a knob of butter in a frying pan over medium-high heat.
  • Pour a ladle full of batter into the pan.
  • Fry the pancakes for about 2 minutes on each side until golden brown, then remove from the pan and cover with aluminium foil to keep warm.
  • Melt a small knob of butter every time before frying the next pancake.

  • Slice the strawberries. 
  • Serve the pancakes on plates. 
  • Top with the whipped cream and strawberries. 
  • Drizzle with honey to taste.
