Cooking Steps

  • Preheat the oven to 200°C. 
  • Peel and quarter the pears.

  • Melt the cane sugar and butter in a frying pan for 5 - 7 minutes (see Tip). 
  • Add the pears and let simmer for 15 - 20 minutes, or until the caramel has reduced. 
  • Transfer the mixture to an oven dish and arrange the pears in a clockwise pattern. 

Tip: if you have an oven-proof skillet at home, you can also make the caramel in there and use the skillet to finish the tarte tatin in the oven instead of the oven dish.

  • Lay the puff pastry over the pears and tuck the edges into the oven dish. 
  • Prick the pastry several times with a fork. 
  • Bake the tarte tatin for 20 - 25 minutes. 
  • Remove from the oven and let the tarte tatin cool for a few minutes.

  • Meanwhile, transfer the cream and 1 tbsp of granulated sugar to a clean mixing bowl.
  • Use a handheld mixer to whip the cream into stiff peaks.
  • To serve, carefully invert the tarte tatin onto a serving plate (see Tip).
  • Serve with the whipped cream. 

Tip: you can also serve the tarte tatin straight out of the oven dish, without flipping it. It will be delicious either way!
