Cooking Steps

Prepare

  • Preheat the oven to 200°C.
  • Cut the bell pepper into short strips and give the eggplant a 2cm dice. 
  • Crush or mince the garlic and dice the tomato.
  • Juice the lemon into a small bowl. Finely chop the fresh herbs.
Fry the vegetables

  • Heat a drizzle of olive oil in a large deep frying pan over medium-high heat.
  • Fry the eggplant for 3 - 4 minutes or until golden-brown, then add the bell pepper and half of the garlic and fry for 3 minutes, covered.
  • Add the Middle Eastern spices and fry for 1 more minute.
Make the tahini sauce

  • Transfer the yogurt and the tahini to a tall container, along with the rest of the garlic, half of the fresh herbs and 1 tsp lemon juice per person (see Tip). Use an immersion blender to process into a smooth sauce, then set aside.
  • Bake the naan for 2 - 3 minutes in the meantime.
  • In a small bowl, combine the tomato with the extra virgin olive oil, the white wine vinegar and the rest of the fresh herbs. Season to taste with salt and pepper.

Tip: you can also add more lemon juice as preferred.

Serve

  • Spread the naan with three quarters of the tahini yogurt sauce.
  • Set aside a quarter of the vegetables, then top the naan with the rest. Crumble over the Greek-style cheese and drizzle with the rest of the tahini yogurt sauce.
  • Add the rest of the vegetables to the tomato salsa and toss well to combine, then serve alongside the naan pizza.
