Cooking Steps

1
  • Boil plenty of water in a lidded pot or saucepan and crumble in the stock cube. Cook the noodles for 5 minutes until al dente, then drain and rinse under water. Set aside until further use.
  • In the meantime, dice the bell pepper and onion.
  • Cut the lime into 2 wedges per person.
  • Finely chop the scallions and separate the white part from the greens.
2
  • Heat a small drizzle of sunflower oil in a deep frying pan over medium-high heat and fry the white part of the scallions and bell pepper for 4 - 5 minutes.
  • In the meantime crush or mince the garlic and grate the carrot.
  • Add the garlic, carrot and the minced meat to the pan and fry on high heat for 3 minutes, separating the minced meat as you do so.
3
  • Add the red wine vinegar, honey, soy sauce, hoisin sauce, coconut milk and peanut butter to the pan, mix everything and heat for another 3 - 4 minutes.
  • Season with lime, sambal*, salt and pepper to taste. Save 1 lime wedge per person for serving.

*Take care, this ingredient is spicy! Use as preferred.

4
  • Mix the  noodles with sauce and all the vegetables.
  • Garnish with the green from the scallions and the lime wedges.
