Prepare the stock in a lidded pan, then gently boil the giant couscous for 12 - 14 minutes with the lid on until there is no liquid left. Fluff through the grains with a fork and set aside without the lid. Slice the onion into thin half rings. Cut the courgette in half lengthways and then slice into thin crescents. Press or mince the garlic.
In the meantime, heat the olive oil in a frying pan over medium-high heat. Add the diced chorizo, onion and garlic and fry for 3 minutes, then add the courgette and continue frying for 6 - 8 minutes or until the courgette is cooked. Stir in the cranberry chutney and giant couscous and cook for another minute. Season with salt and pepper to taste.
Put the radicchio and iceberg lettuce in a salad bowl. Cut the semi-dried tomatoes into thin strips and pour the oil from the container into the salad bowl. Add the white wine vinegar and some salt and pepper to taste.
Serve the giant couscous with vegetables and chorizo on plates alongside the salad. Garnish with the semi-dried tomatoes and crumble the Greek-style cheese over the salad.
