Cooking Steps

Prepare

  • Boil plenty of salted water in a pot or saucepan and cook the pasta for 10 - 12 minutes.
  • Drain and rinse under cold water, then set aside.
  • In the meantime, slice the courgette into crescents. 
  • Chop the onion (see Tip).

Tip: the onion will be served raw, but if preferred you can fry it with the vegetables in step 2 instead.

Fry the vegetables

  • Heat the olive oil in a wok or deep frying pan over medium-high heat.
  • Fry the courgette for 4 - 6 minutes, then add the Sicilian herbs and cherry tomatoes.
  • Fry for 3 - 5 more minutes, seasoning to taste with salt and pepper.

Did you know... courgettes are technically classified as a fruit, as are cucumbers, pumpkins and tomatoes. Courgettes are high in iron, vitamin C and calcium.

Prepare the tuna

  • Finely chop the fresh herbs. Drain the tuna and reserve the oil.
  • In a small bowl, combine the tuna with the mayonnaise, the fresh herbs and the onion. Season to taste with salt and pepper.
  • Transfer the pasta to a large salad bowl and drizzle with the reserved tuna oil as preferred, then toss well to coat.
  • Add the vegetables and toss well to combine, then set aside to cool slightly before serving.
Serve

  • Add the lettuce and three quarters of the tuna to the pasta.
  • Mix well, seasoning to taste with salt and pepper.
  • Serve the pasta salad on plates and top with the rest of the tuna.
