Cooking Steps

  • Take the steak strips out of the fridge and allow to reach room temperature.
  • Chop the onion into thin half rings. Chop the bell peppers into strips.

  • Heat a drizzle of olive oil in a frying pan and fry half of the onion and the bell peppers for 5 - 6 minutes over medium-high heat with half of the smoked paprika powder and half of the BBQ-rub
  • Dice the tomato. In a small bowl mix the tomato with the rest of the BBQ rub, the rest of the onion and a drizzle of olive oil. Season with salt and pepper and mix well.

  • Prepare 50 ml water per person. Melt the butter in a saucepan, add the flour and toast for 2 - 3 minutes or until golden-brown and fragrant. Gradually whisk in the water until smooth and well incorporated. Add the cheddar and stir until it has melted. Add the rest of the smoked paprika powder mix well and turn off the heat. Season with salt and pepper.
  • In the meantime heat another frying pan on high heat and bake the tortilla's 30 seconds on each side - not using any oil or butter.

  • Add the beef strips to the onion and bell pepperand bake for another minute. Season with salt and pepper.
  • Divide the beef and vegetables over the tortilla's and top with the cheddar sauce and tomato salsa.
  • Fold the tortilla's twice to serve.
