Cooking Steps

  • Preheat the oven to 200°C (see Tip).
  • Slice the onion into half rings.
  • Cut open the sausage and squeeze the meat out of its skin, then tear into smaller chunks.
  • Crush or mince the garlic.

Tip: keep the pizza dough in the fridge until step 3, so as to ensure the best results.

  • Boil plenty of salted water in a pot or saucepan.
  • In a small bowl, combine the passata with the garlic, the Italian herbs, the sugar and half of the balsamic vinegar. Season to taste with salt and pepper.
  • Halve the broccolini lengthways and boil for 1 - 2 minutes, then drain and set aside. Season to taste with salt and pepper.

  • Transfer the pizza dough to a parchment-lined baking sheet and spread with the tomato sauce.
  • Top with the onion, sausage, broccolini and mozzarella.
  • Drizzle with half of the extra virgin olive oil and season to taste with salt and pepper.
  • Bake the pizza in the oven for 12 - 14 minutes, or until the cheese has melted.

  • In a salad bowl, combine the arugula with the rest of the extra virgin olive oil and the rest of the balsamic vinegar. Season to taste with salt and pepper.
  • Quarter the cherry tomatoes.
  • Serve the pizza topped with the arugula, the pesto and the cherry tomatoes.
