Cooking Steps

  • Preheat the oven to 200°C.
  • Cut the onion into half rings.

  • Remove the pulled chicken from the package and pull it into small pieces using 2 forks.
  • Heat a generous drizzle of sunflower oil in a frying pan over medium-high heat and fry the onion for 2 - 3 minutes.
  • Add the pulled chicken and heat it up for 1 - 2 minutes while stirring. Add the barbecue sauce, 1/2 tsp brown sugar and 2 tsp mustard, and stir it through for 1 minute.
  • Meanwhile, bake the brioche buns in the oven for 2 - 3 minutes.

  • In a salad bowl, mix the mayonnaise with 2 tsp white wine vinegar, 2 tsp extra virgin olive oil and 2 tsp mustard.
  • Season the dressing with salt and pepper to taste.
  • Mix the red cabbage and carrot into the dressing.

  • Cut open the brioche buns and top with the coleslaw and pulled chicken.
  • Serve warm.
