Cooking Steps

  • Preheat the oven to 180 degrees.
  • Chop the onion into half rings.
  • Grate half of the beetroot and the other half cut in 1cm cubes.
  • In a bowl, beat the eggs, add the cooking cream, mustard, grated beetroot, salt and pepper, wisk to combine. 

Did you know... beetroot is very high in fibre; 200g provides a fifth of the RDA. It's also rich in potassium, which helps maintain a healthy blood pressure.

  • Transfer the puff pastry to a parchment-lined baking sheet.
  • Pierce the bottom of the pastry with a fork several times.
  • Fill the pastry with the grated beetroot and egg mixture. Season with salt and pepper. Devide the cheese cubes on top.
  • Place it in the oven and bake for 30 minutes, or until nicely brown.

  • In the meantime heat a drizzle of olive oil in a frying pan over medium-high heat and fry the onion for 2 - 3 minutes.
  • Deglaze with half of the balsamic vinegar

  • Divide the onion over the tart, topped with the lamb's lettuce.
  • Drizzle balsamic vinegar and a light drizzle of oil over the salad.
  • Garnish with the sunflower seeds.
