Cooking Steps

  • Boil plenty of water in a pot or saucepan for the noodles.
  • Heat a drizzle of sunflower oil in a frying pan over medium-high heat.
  • Fry the tofu with the broccoli-cabbage mix for 6 - 8 minutes.
  • Meanwhile, quarter the lime.

  • Wrap the noodles in a clean kitchen towel and bash with a pan so as to break the noodles into rough pieces.
  • Boil for 4 - 5 minutes until done, then rinse under cold water.
  • Meanwhile, use a vegetable peeler or cheese slicer to shave the carrot and cucumber into ribbons.
  • Roughly chop the coriander.

  • Transfer the noodles to a large bowl and drizzle with sunflower oil.
  • Add the teriyaki sauce, vegetable ribbons and half of the coriander, along with the tofu and vegetables from the frying pan.
  • Squeeze in 1 lime wedge per person and mix well to combine. Season to taste with salt and pepper.
Serveren

  • Serve the noodles on plates, garnished with the peanuts and coriander.
  • Serve with the rest of the lime wedges.
