Cooking Steps

Prepare

  • Crush or mince the garlic.
Fry the mince

  • Heat a drizzle of olive oil in a large wok or deep frying pan over medium-high heat and fry the garlic for 1 minute.
  • Add the mince and fry for 3 minutes, separating it as you do so.
  • Stir in the vegetable mix and fry for 4 - 6 more minutes.

  • Stir in the mascarpone, teriyaki sauce and soy sauce, then add the udon noodles and cook for 3 more minutes.
  • Season to taste with salt and pepper.
  • Roughly chop the fresh herbs in the meantime.

  • Serve the udon noodles on deep plates and garnish with the peanuts and fresh herbs.
