Cooking Steps

Prepare

  • Preheat the oven to 220°C. 
  • Dice the pork into small pieces, then place in a bowl with the ketjap manis.
  • Wash the potatoes and cut them into fries no thicker than 1cm.
  • Transfer the fries to a parchment-lined baking sheet and drizzle with olive oil. Season with salt and pepper, then toss well to coat. Roast in the oven for 25 - 30 minutes.
Fry the onion

  • Dice the onion.
  • Heat a light drizzle of olive oil in a frying pan and fry the onion for 1 - 2 minutes over low heat. Deglaze with the balsamic vinegar, then remove from the pan and set aside. Clean the frying pan and use it for the satay.
  • Chop the butter lettuce. Grate the carrot.
  • Mix the extra virgin olive oil and mustard in a salad bowl and season to taste with salt and pepper. 
Fry the pork

  • Halve the cucumber and remove the seeds. Slice into crescents and transfer to the salad bowl, along with the lettuce and carrot. Toss well. 
  • Thread the pork onto 2 skewers per person using a wavy motion for a better hold.
  • Heat a light drizzle of olive oil in the frying pan over medium heat. Fry the pork for 5 - 7 minutes or until done.
  • When the pork is cooked, move it to one side of the pan. Add the peanut sauce next to it and heat for 30 seconds to 1 minute.
Serve

  • Deseed the red chilli pepper and chop finely.
  • Roughly chop the peanuts.
  • Serve the pork satay on a plate with the peanut sauce. Garnish with the red chili pepper, peanuts, and onion. 
  • Serve with the salad, fries and mayonnaise to taste.
