Cooking Steps

  • Preheat the oven to 200°C.
  • Tear the mozzarella into pieces and slice the tomato. 
  • Chop the basil into strips.

  • Place the demi-baguette on a parchment-lined baking sheet and bake in the oven for 6 minutes.
  • In the meantime, mix a half tbsp extra virgin olive oil and 1 tsp white wine vinegar in a salad bowl. 
  • Add the salad leaves and mix well. Season with salt and pepper to taste.

  • Cut the baguette open and spread over the green pesto. 
  • Top with the salad, tomato, mozzarella and basil. 
  • Drizzle over the crema di balsamico and a half tbsp extra virgin olive oil. Season with salt and pepper to taste.

  • In the meantime, warm up the tomato soup in a soup pan over medium-high heat. 
  • Serve the tomato soup in deep plates with the baguette caprese on the side.
