Cooking Steps

1
  • Boil plenty of water in two pots or saucepans for the spaghetti and the broccoli.
  • Boil the pasta for 10 - 12 minutes, then reserve a small amount of the pasta water before draining and setting aside.
  • Cut the head of the broccoli into small florets and dice the stem.
  • Boil the broccoli for 5 - 7 minutes, then drain and set aside. Season with salt & pepper.

Did you know... broccoli is considered a superfood, and for good reason - not only is it high in vitamins B, C and E, it's also a great source of calcium, potassium and iron.

2
  • Zest the lemon. Cut the lemon into wedges.
  • Dice the tomato.
  • Heat a drizzle of olive oil in a deep frying pan over medium-high heat. Add the shrimp and fry for 2 - 3 minutes.
  • Add the juice of one lemon wedge per person and fry for one more minute or until done. Season to taste with salt and pepper. Remove the shrimp from the pan and set aside in a bowl.
3
  • Add the onion, garlic, and fry in the same pan for 1 - 2 minutes.
  • Add the tomato with Sicilian herb mix, fry for another 1 - 2 minutes.
  • Add the cooking cream and crumble in the stock cube and add the reserved pasta water if the sauce is too thick. Allow the sauce to reduce for 1 minute.
  • Add the pasta and cook for one more minute.Season to taste with salt and pepper.
4
  • Serve the pasta on deep plates, and then serve the broccoli, shrimp, lemon wedges, lemon zest, and arugula in bowls.
  • Serve the pasta and bowls on the table so everyone can assemble their own spaghetti with their preferred toppings.
