Cooking Steps

  • Preheat the oven to 200°C.
  • Bake the pita bread for 6 - 8 minutes, or use a toaster.
  • Heat a light drizzle of olive oil in a frying pan.
  • Fry the chicken breast for 2 - 3 minutes per side. Reduce the heat and add the BBQ sauce, and fry for 4 - 5 minutes or until done. Season with salt and pepper to taste.

  • Cut the onion into thin half rings. Heat another frying pan with a light drizzle of olive oil. Fry the onion for 3 - 4 minutes over medium-high heat. Season with salt and pepper to taste. Deglaze with balsamic vinegar.
  • Cut the cucumber into crescents.
  • Roughly chop the fresh herbs.
  • Crush or mince the garlic.

  • In a salad bowl combine the honey with the white wine vinegar and mayonnaise. Season to taste with salt and pepper.
  • Add the cucumber, slaw mix, garlic, herbs and salt and pepper. Toss everything together.
  • Cut the tomato into slices.

  • Fill two pieces of pita bread per person with the chicken, onion, salad and tomato. 
  • Serve the rest of the salad and tomato on the side.
