Apfelstrudel is een traditioneel gebak uit Wenen. In dit recept vul je het bladerdeeg met een appel-rozijnvulling en maak je het helemaal af met poedersuiker en zelfgeklopte slagroom!

Cooking Steps

  • Preheat the oven to 200°C. 
  • Transfer the puff pastry to a parchment-lined baking sheet. 
  • Peel and core the apples, then cut into slices. Transfer the apples to a large bowl.
  • Juice half a lemon and mix the lemon juice with the apple slices.

  • In a bowl, mix 100g granulated sugar with the cinnamon and flour. 
  • Add the raisins, shaved almonds and flour to the apple and mix well. 
  • Spread the apple mixture lengthways along the middle of the puff pastry, leaving the ends clear.

  • Fold the top and bottom edge of the pastry over the apple filling making sure the egdes overlap, then fold the sides shut. Make sure to press the edges together well.
  • Turn the apfelstrudel over so that the seam is face down.
  • Poke a few holes in the top of the strudel with a fork.
  • Bake the strudel in the oven for 30 - 35 minutes.

  • Meanwhile, pour the heavy cream and 1 tbsp granulated sugar to a tall container (make sure the container is completely clean).
  • Use an electric whisk to beat the cream until stiff peaks form.
  • Sprinkle the icing sugar over the apple strudel.
  • Cut the apfelstrudel into thick slices and serve with the whipped cream.

Tip: Add more sugar as preferred.
