Cooking Steps

1
  • Wash the baby potatoes and cut into quarters. Heat a drizzle of olive oil in a deep frying pan with a lid and fry the baby potatoes for 12 minutes over medium heat, covered.
  • Remove the lid and continue frying for a further 3-4 minutes, tossing regularly. Season with salt and pepper.
  • Discard the tips of the green beans and then cut in half.
2
  • Transfer the green beans to a pot or saucepan with a lid and cover with a shallow layer of water. Add the carrots and a pinch of salt and cover with the lid, then bring to the boil and allow to cook gently for 6 - 8 minutes. Rinse with cold water.
  • Cut 3/4 of the onion into rings (see Tip). Finely chop the rest of the onion.
  • Heat a drizzle of olive oil in a frying pan over medium-high heat. Fry the chicken burger with the onion rings for 8 - 10 minutes or until done, turning regularly.

Tip: If you don't like raw onion, cut the whole onion into rings.
3
  • In a salad bowl make a dressing from the white balsamic vinegar, extra vierge olive oil, mustard and honey.
  • Add the cooled veggies and mix well. Season to taste with salt and pepper.
4
  • Serve the burger on the bun with the onion rings. Top with regular mayonnaise for the kids and sriracha mayo for the parents.
  • Serve the veggie salad, adding the chopped onion for the parents. Serve the baby potatoes on the side, sprinkle with the potato seasoning mix and add some mayonnaise.
