Cooking Steps

  • Preheat the oven to 220°C.
  • Cut the demi-baguettes in half lengthways.
  • Finely chop the basil.
  • In a small bowl, combine the passata with the Italian herbs, the extra virgin olive oil, half of the basil and some salt and pepper.

  • Dice the tomatoes. 
  • Tear the mozzarella into small pieces.
  • Transfer the baguettes to a parchment-lined baking sheet and evenly spread the tomato sauce, then top with the mozzarella and tomatoes.

  • Put the bread in the oven for 6 - 8 minutes, or until the cheese has melted.

  • Garnish the bread with the rest of the basil, then season with salt and pepper to taste.
  • Slice the bread and serve on a large plate or dish.
