Cooking Steps

Prepare

  • Preheat the oven to 230°C and prepare the stock.
  • Boil plenty of water in a pot or saucepan and cook the orecchiette for 11 - 13 minutes. Then drain and set aside.
  • Meanwhile, crush or mince the garlic.
  • Heat a drizzle of olive oil in a deep frying pan over medium-high heat and fry the garlic for 1 minute. Stir in the vegetable mix and fry for 2 - 3 more minutes.
Mix the pasta

  • Quarter the lemon and juice one quarter per person into a small bowl.
  • In a small bowl, mix the Red Leicster with the shredded mozzarella.
  • To the vegetables, add the cream, the stock, along with half of the cheese mixture and 0.5 tbsp lemon juice per person. Season to taste with salt and pepper. Stir in the Sicilian herbs and the pasta. Mix well to combine.
Finish the pasta bake

  • Discard the thyme stalks and finely chop the leaves.
  • In a bowl, combine the panko with the thyme, the rest of the cheese mixture and a drizzle of extra virgin olive oil. Season to taste with salt and pepper.
  • Transfer the pasta to an oven dish. Top with the panko mixture. Bake in the oven for 3 - 5 minutes or until the topping is golden-brown and crispy.
Serve

  • Allow the pasta bake to rest for at least 5 minutes before serving.
  • Serve the pasta with the rest of the lemon wedges.
