Cooking Steps

  • Boil plenty of water in a pot or saucepan for the noodles and crumble the stock cube into the water. 
  • Cut the scallions into three pieces and cut the shallot into halved rings.
  • Cut the bell pepper into pieces of 2 by 2cm.

  • Boil the noodles for 4 - 5 minutes until al dente.
  • Heat a drizzle of olive oil in a wok or deep frying pan and fry the white part of the scallions, bell pepper, and shallot for 2 minutes over high heat.
  • Add the water, black bean paste, ginger paste honey, and the rest of the scallions and boil for 2 minutes. Lower the heat and let the water evaporate and the sauce thicken for 2 minutes.

  • Cut the cucumber into crescents and mix with the white wine vinegar and sugar.
  • Season with pepper and salt.
  • Melt a knob of butter in a frying pan over medium-high heat and fry the cod for 1 - 2 minutes on each side. Season to taste with salt and pepper.

  • Serve the noodles in bowls. 
  • Top with the veggies, the sauce and fish on top
  • Serve with the cucumber.
