Cooking Steps

  • Preheat the oven to 200°C. Transfer the baby potatoes to a bowl and drizzle with sunflower oil. Season with salt and pepper, then toss well to coat.
  • Transfer to a parchment-lined baking sheet and roast in the oven for 16 - 20 minutes or until golden-brown, tossing halfway.

  • Slice the courgette into thick crescents. In a bowl mix them with a drizzle of olive oil, season to taste with salt and pepper. 
  • Bake the courgette in the oven for 10-12 minutes. Then transfer it back to bowl and mix with the zhoug.

  • Finely chop the onion.
  • Cut half of the lemon into wedges and juice the rest into a salad bowl.
  • Add the sugar, extra vierge olive oil and onion to the lemon juice.

  • Heat a drizzle of olive oil in a lidded frying pan over medium-high heat and fry the sausages for 3 minutes until evenly browned.
  • Cover with the lid and fry for a further 4 - 6 minutes over medium heat or until done, turning regularly.

  • Roughly chop the coriander. Quarter the tomatoes.
  • Add the tomatoes and coriander to the onion in the salad bowl, mix well and season to taste with salt and pepper.

  • Spread out the hummus on a deep plate and serve the baby potatoes on top, sprinkle over the za'atar. 
  • Serve the chicken sausages on a plate along with the courgette, the tomato salad and baby potatoes.
