Cooking Steps

  • Preheat the oven to 180°C. 
  • Very finely dice both the onion and the Romano pepper.
  • Heat the olive oil in a deep frying pan over medium-high heat and fry 3/4 of the onion and half of the pepper for 2-3 minutes (the rest you will use to make a fresh salsa).

  • Add the chicken mince and ground paprika and fry for 2 minutes, separating the mince it as you do so.
  • Add the passata and ketjap, bring to the boil and let simmer for 4-5 minutes.

  • In the meantime transfer the taco shells to a parchment-lined baking sheet and warm in the oven for 5 minutes.
  • Finely chop the parsley.
  • Zest the lime. Then cut half of the lime into wedges and juice the rest into a small bowl.
  • Add the extra vierge olive oil, parsley and the rest of the onion and pepper. Mix well and season to taste with salt and pepper.

  • Drain the beans and add to the frying pan, heat for 1 more minute. Season to taste with salt and pepper.
  • Fill the taco's with the chicken mince and beans mixture. Top with the cheese and the pepper salsa.
