Cut open the brioche bun.
Transfer the sugar to a deep plate. In another deep plate, whisk the eggs, milk and cinnamon with a pinch of salt.
Heat the sunflower oil in a frying pan over medium-high heat. Dip the brioche into the eggs, then coat with the sugar. Be sure to not let the brioche sit in the egg mixture for too long. Fry the brioche in the pan for around 4 minutes per side or until golden-brown.
Serve the French toast on plates. Top with the mascarpone and garnish with the raspberries. Sprinkle over a pinch of cinnamon to finish.
